Hummus is one of those dishes that is not only really, REALLY easy to make at home, but tastes sooooo much better than the stuff you can buy in the store.
Personally, I find most store bought hummus to be way to acidic. The citric acid typically used for flavoring and preservative just can’t compare to the wonderful flavor you get from a squeeze of fresh lemon juice.
But here’s the deal with hummus in my house – I don’t follow a recipe. I simply make it to taste depending on my mood. And in my opinion, so should you.
Hummus is very forgiving, and a great dish for practicing cooking based on taste, rather than following a recipe to the letter. So I invite you to try making hummus from scratch, and embark on a cooking-by-taste adventure!
Here are the basic ingredients –
- Canned chickpeas
- Tahini (This is sesame paste, and can be purchased in most grocery stores. You can use any nut butter in a pinch, but the bitterness of tahini really adds a nice element of structure to hummus.)
- Extra virgin olive oil
- Salt to taste
- Seasonings of your choice to taste – I like any combo of paprika, cayenne, ground cumin, ground sumac, and Za’atar (I change these up depending on what I’m in the mood for, and what I have on hand.)
- Fresh squeezed lemon juice (Please, please don’t use the pre-packaged lemon juice that comes in a bottle.)
What to do per 15 oz. can of chick peas –
- Drain the chickpeas, reserving the liquid.
- Roughly chop a clove or two of garlic, depending on how much you like the flavor of garlic.
- Place the chickpeas, garlic, about 1 Tbs of tahini, a heavy glug of olive oil, salt, a heavy pinch of your seasonings of choice, and the juice of about 1/2 a lemon in a food processor (or use a large bowl with an immersion blender). Pulse or blend until the chickpeas are smooth.
- This is the important part! Taste the hummus, and think about what it needs –
- If the texture is dry, either add more olive oil, a splash of your reserved chickpea liquid, or both.
- If you would like more bitterness, add more tahini.
- Need more zing? Add more lemon juice.
- A little bland? More salt and spices.
- Added too much of something? No worries! Simply add more chickpeas – problem solved! 😉
- Whiz it up again, and give it another taste. Keep adjusting until it tastes perfect for you!
- Put your delicious hummus in a pretty bowl, drizzle it with a bit more olive oil, throw a dash of paprika on the top, and maybe a sprig of parsley, and serve it up with some tasty chips or pita bread.
